By the way, I really hate the word loaf. Despite that, this loaf was wicked good eating last night.
- Chop one bell pepper and one onion.
- Soak 2 pieces of wheat bread (torn up) in 1/2 cup skim milk.
- Cook veggies in 2 teaspoon EVOO. About 8 minutes.
- Lightly beat one egg.
- Mix it all together real nice, shape into 4×9 loaf. Slap some BBQ sauce all over the top. Bake at 350 for 1 hour.
Oh also put some all season or garlic salt in your mixture for some yummy flavor explosions.
